This is one of the first recipes my mother and I created, and we’ve been making variations of this for at least 15 years.  These chunky cookies are so easy to make. It’s a one bowl recipe that results in a no-chill dough, which can be glammed up with chocolate chunks, spices, dried fruit and/or nuts. No rolling pin or cookie cutter needed, just spoon the dough on to baking paper and bake!
The cookies in the photos are Espresso Triple Chocolate Chunk Cookies- I’ve simply added 1 tsp of espresso and about half cup of assorted chocolate chips to the base recipe given below. The base recipe results in plain vanilla Chunky Cookies, but I’ve added instructions of how to include (for the want of a better word) toppings, like chocolate chips, fruit and/or nuts to make ultra delicious cookies with character and a bit of oomph.
Prep time – 10 minutes
Baking time- 10-12 minutes
Makes 10 -12 cookies

Ingredients
 - 100g Butter
 - 150g Sugar
 - 1 Egg
 - 300g Flour
 - 1 tsp Baking powder
 - 1 tsp Vanilla extract

Method
Preheat oven to 180 C. Cream butter and sugar. Whisk in egg. Add vanilla extract or any flavoring you like. Sift in flour and baking powder. If your toppings, add half at this stage. Mix until the dough forms. Add the rest of your topping and just gently bring the dough together with your hands.   

Spoon or dollop on to a baking paper lined baking tray and bake for 10-12 minutes. Let the cookies sit on the baking tray for 5 minutes and transfer to a wire rack to cool completely.
