As a mum with two young kids, I'm constantly trying to create nutrient packed meals within a budget. This kind of "fried rice" is an excellent way of using leftovers and packing a meal with veggies, because a little bit goes a really long way. The beauty of this meal is that it can change each time you make it, as your ingredients may differ. We often use eggs, carrot and leaks and shrimp paste if its available. Ironically, despite this being fried rice, I very rarely use any oil, as I use the fat in the meat to cook the veggies and flavour the rice.
This “Mixed Green Rice” has a total of about 50g of protein (leftover roast pork from my freezer stash and one sausage), along with some fresh green veggies and leftover rice.
We recently got some lovely fresh veggies, so we used a few florets of broccoli, half a green bell pepper and a couple stalks of celery. I chopped the veggies and meat, cooked the broccoli and celery in a bit of water till soft, then added the chopped meats and the rice. The green peppers were added last to retain their crunch. We seasoned this with salt, soy sauce and 1/2 tsp of store bought chili paste . Finally, we snipped in a fresh lime leaf for a bit of zip and that lovely citrusy fragrance.
